Steeped in nearly 5,000 years of Asian tradition and legend; green tea continues to enjoy great popularity throughout the world today. In Japan it is the daily drink of choice; as well as the center of centuries-old rituals that foster harmony, simplicity, and serenity. In addition, recent medical findings are now pointing to what ancient tradition has indicated all along, an association between green tea and good health. Its antioxidant properties have been known to reduce the risk of stroke, lower blood cholesterol, fight cavities, slow down potentially harmful blood clotting and act as an anti-inflammatory agent in treating arthritis. Further studies also suggest the possible benefits that green tea contributes to the fight against heart disease and cancer.
All true teas contain caffeine, but the caffeine found in green tea is deemed to be gentler than that obtained from coffee. The average cup of green tea contains between 8 and 20 mg of caffeine (black tea contains twice the amount; a cup of drip coffee has between 90 and 150 mg; and soda has between 40 to 54 mg.) Green tea offers the best of both worlds when it comes to caffeine; enough to promote alertness and mental clarity, aid in digestion and metabolism, and enhance the senses of smell and taste; but not enough to trigger nervousness or discomfort. An obvious benefit of Japanese green tea is that it is a calorie and preservative-free, Vitamin C-rich, all natural beverage that helps to maintain fluid balance in our bodies and spiritual balance in our lives.
Most varieties of tea are derived from the same plant, the Camellia Sinensis. What separates green teas from others, such as oolongs and blacks, is the amount of fermentation (oxidation) they experience. For green teas, oxidation is halted by heat treating soon after the leaves are freshly picked. In Japan, this is almost exclusively done by gentle steaming, whereas other countries may widely use pan roasting. Tea leaves allowed to partially or fully ferment become oolong or black teas, respectively. Japanese green tea is well known for its delicate, refined, and natural taste that results from the unique processing traditions and techniques that have evolved over the centuries.

Matcha: Produced from specially grown "tencha" ("Heaven's Tea") leaves; matcha is ground into a fine powder after steaming, drying, and removing the leaf veins and stems. Matcha has been used for centuries in the Japanese Tea Ceremony and currently enjoys wide popularity as a highly nutritious beverage rich in antioxidants, minerals, vitamins, fiber, and amino acids. Koots uses only pure, certified-Organic matcha in all of our matcha-based drinks.

Sencha: The term "sencha" refers to first flush green teas whose tender leaves are picked in early spring, and regarded as much higher in quality than later harvest teas that contain more astringency. Rich-green Sencha is mild with a delicate sweetness and refreshing aroma. Koots Organic Sencha is grown in Kagoshima prefecture and is high in Vitamin C and antioxidants.

Fukamushicha: Koots Yame Midori (Green) & Yame Nishiki* (Brocade) teas are high-quality examples of fukamushicha, or "deep-steamed" tea. High-grade sencha is steamed two to three times longer than usual producing a deep green leaf with rich flavor and aroma. This technique does not make it a "stronger" tea, just a tea with a unique character. Midori and Nishiki are also shade-grown and come from a select farm in the town of Yame, located in Southern Japan's Fukuoka Prefecture, which has enjoyed a reputation as a specialty tea-growing region for generations.

Hojicha: Koots Organic Hojicha is produced by roasting green tea leaves over high heat, resulting in tea that is a rich brown in color and savory in flavor and fragrance. The roasting process significantly reduces the caffeine and tannin content, creating a mellow toasted-flavor tea to relax with.

Genmaicha: While other brands may contain lower quality bancha, Koots Organic Genmaicha uses premium Kagoshima-grown sencha leaves combined with roasted brown rice (genmai) to create a mild tea with a slightly nutty taste (some say with a fragrance reminiscent of popcorn).
